Snow Fall 2021

Have I mentioned how much Elkanah LOVES TO EAT SNOW??? She could have it for a full meal if it were up to her!!! Anyways, it has been a struggle to take her outside to play when all she wants to do is eat snow....then she cries because her hands are "frozen" because she removes her gloves for ease of accessing the snow.    On the other hand, Eliakim LOVES to play outside in the snow. He loves to throw snowballs and he helped me build this snowman. I think its all thanks to school that he has fallen inlove with the outdoors especially during winter since I am pretty certain he did not get this from me :). But I am so happy and thankful that I have been given this time to spend with them and enjoy the outdoors even in the winter.       On milder days, we love to go for walks in the neighbourhood and they have actually become my walking buddies. Sort of. Because Elkanah still likes to stop every 5 seconds to pick up and eat snow and I have to keep telling her to stop because i

Elkanah is now turning into a little lady! She is so LOVELY, smart, sweet and everything in between! I can't get enough of her. Her vocabulary has exploded these past few months and she is speaking so well and making full sentences. This morning, she used the word "actually," in a sentence. And lately, she has been obsessed with only wearing dresses. She calls herself a princess and says WOW look! She is so sweet and cute. The other day she got her nails painted for the first time at Grandma's house. At first, she absolutely refused, but then she came around and had her nails painted pink. Unfortunately, since she bites her fingernails (and her toenails too lolll), you can't really see the nailpolish and after a couple of days it disappeared, but it was nice while it lasted.

Online learning

These are some of the perks of online learning. In addition to not having to get up earlier in the morning to get the kids ready and out the door, having both Eliakim and Elkanah learn together and have fun is a privilege to watch. These past couple of months with online learning have had their share of challenges. Eliakim is not as focused when he is at home and required to spend his time on the screen and Elkanah doesn't make it easy for him to focus as she wants to use the computer also or do her own thing but with my attention.

Recipes 2021

2021 has started off to be a great cooking year!! I am motivated to keep on cooking and baking as my cravings for good food increase, thank God, so does my apetite and energy to make them :). On Christmas eve, Mekdi made a full chicken with stuffing, mashed potatoes and gravy and apple pie, all from scratch. So, I did the same lol and it was delicious! Recipe for flatbread:  https://cafedelites.com/easy-garlic-flatbread-recipe/ The only problem I had with the apple pie, which I attempted to make 2x, was that the dough was extremely hard to cut through with a knife....so I found this great recipe for apple crumble, which takes 1/2 the time to make, but is even more delicious and a new favourite! Recipe:  https://www.bettycrocker.com/recipes/best-apple-crisp/3715a45c-3c00-430c-bbe2-9865f9013238  All thanks to my favourite co-worker Jenis, I know am loving this Pad Kao Proa Thai chicken and rice dish. All you need are Thai chilli peppers and garlic, saute them, then add chicken, then add
